P's Favorite Pancakes

Featherweight Pancakes
(serves 3-4)

1 cup unbleached all-purpose flour
2 tsp granulated sugar
1/2 tsp table salt
1/2 tsp baking powder
1/4 tsp baking soda
3/4 cup buttermilk
1/4 cup milk (plus an extra tbsp if batter is too thick)
1 large egg, separated
2 tbsp unsalted butter, melted
Handful of Ghirardelli chocolate chips*
vegetable oil for brushing griddle/skillet
Syrup for serving!

1. Mix dry ingredients in medium bowl. Pour buttermilk and milk into 2-cup Pyrex measuring cup. Mix yolk with melted butter, then stir into milk mixture. Whisk egg white in large bowl to stiff peaks (bubbles in the foam). Dump wet ingredients into dry ingredients all at once; whisk until just mixed. Quickly fold egg white into batter.

2. Meanwhile, heat griddle or large skillet over strong medium-high heat. Brush generously with oil. When water splashed on surface confidently sizzles, spoon batter, about 1/4 cup at a time, onto griddle, making sure not to overcrowd. When pancake bottoms are brown and top surface starts to bubble, 2 to 3 minutes (*toss in a few chocolate chips to really win them over), flip cakes and cook until remaining side has browned, 1 to 2 minutes longer. Re-oil skillet and repeat for the next batch of pancakes.

Just a warning to anyone who is going to make/eat these. Even though they are called "featherweight" pancakes they still hit like a ton of bricks if you have too many of them.

Totally understand...Matt thinks that he is allergic to pancakes...he says they expand in his stomach immediately causing him to not be able to eat enough. :)

PS- Will P wear her hair in a rubber band now?!? Potty trained, big girl bed, and hair up? What a grown up!

I've convinced her if she helps me cook in the kitchen she has to wear her hair back. So far it's worked! AND she forgets it's in a ponytail!
