If you want to impress your friends, boyfriends, and husbands with your cooking then make this chicken! You can find the recipe in the previous post and it really is a simple one. I only needed assistance with the placing of the lemon and thyme...which I did by myself!
A few notes: I drizzled olive oil on the potatoes and carrots before roasting (to prevent sticking) and I wish I would have added more carrots because they were delicious!

Oooooh la la on the chicken. Sooooo many good things come from roasting veggies ------ even sweet potatoes, asparagus, beets etc,,,,,, in olive oil!!!!!
